30 feet deep underground wine cellar was blasted, excavated and engineered to provide the foundation for the castle. The wines are aged to perfection in stainless steel vats and oak barrels. Aging in the cellar is done for two to five years, in ideal temperature and humidity, provided by the underground environment.

Chardonnay Classic, Pinot Noir and Cabernet Sauvignon are aged for one to five years in French Oak Barrels made by families of Nadalie and Mercier from oak grown in the Regions of Allier, Troncais, Nevers, and Limousin. Each of the regions has its own special flavors and nuances used by wine makers to create unique wines.
